Among the above raw materials, the original substance converted into gelatin is a protein called “collagen”. The definition of collagen can be roughly summarized as follows. It exists in bones and skins and is a poorly soluble substance. After being pre-treated with acid and alkali, heating can destroy its molecular structure of 3 helical chains and randomly divide it into three molecules. Such heat-denatured and soluble collagen is called “gelatin”.
